I really hate baking. You all know this. So for me to post a made-from-scratch cake recipe is a REALLY BIG DEAL. Usually if I can’t open a box, toss in some eggs and oil and throw it in the oven then it’s too much work for me in the baking department.

When my Mom makes this she calls it enchilada casserole. When my Grandma makes it she calls it enchilada casserole. When my Aunt makes it she calls it enchilada pie.
